As far as local success stories go it doesn’t get much more local than this. Tooth & Nail Brewery might have never existed had co-owners Dayna Guy and Matt Tweedy not met while working here. She was our bar manager, a locally-renouned beer expert known for lifting the Toronto beer scene from niche market to cultural touchtones. He was a globetrotting brewing student who worked here between learning the art under some of the most prominent brewmasters in the world. Now partners in marriage and business, the two launched Ottawa’s Tooth & Nail in 2015 to resounding success. Vim & Vigor is their Czech-style pilsner, and the first of their offerings available regularly in Toronto. Pilsners don’t get a lot of play in today’s craft brewing scene, and it’s not for the reason you’re thinking. Truth is – the hoppier, boozier, more sour, more anything you make a beer, the easier it is to hide your mistakes. To make a pilsner true and to style – that is, bright, effervescent, redolent of grain and charged with fresh hop notes – you have to be perfect. This is one of those rare occasions where we eel safe using that word. Please give it a shot and see why we love it.
