Wayan is a farmhouse ale like no other, and harkens back to the roots of the style with the sheer number of ingredients thrown into the measure. The grain bill reads like a who's who of cereals: barley, wheat, spelt, buckwheat oats and rye. Add to that a combination of spices that the brewers refuse to identify, and you've got a frothy, peppery and complex brew that's a perfect pair for all kind of seafood dishes.
