Style: Lambic, Gueuze
This traditional lambic is dusty-dry and aggressively tart, with a riot of complex aromas on the nose and a palate-cleansing finish.  It is made by blending and bottle-fermenting one- to three year old lambics in a fashion similar to that used to craft Champagne.
